Flying cow, anyone?

Can anyone explain the religious significance, or otherwise, of a flying cow?

Not sure but I recall winged bulls were a mythical Assyrian creature but I think theirs had human heads.

It's a winged ox, and the symbol of St Luke the Evangelist - St Matthew has an angel, St Mark a winged lion (see all of Venice) and St John an eagle.
